Winning recipes from the EatRight Ontario Kids Recipe Challenge!

We are excited to share the winning recipes from the 2014-2015 Kids Recipe Challenge!

1st place 

Awesome Mini Mushroom Omelets - This recipe makes 12 muffins, perfect for a family to enjoy for the week. Make these individual omelets to take for breakfast on the run or tuck into a lunch for the kids. Easy to pick up and eat warm or cold.

Chicken Tzatziki Tortilla Roll Ups - This is a great and easy way to use up leftover chicken and serve it up for lunch. Cut into small roll ups and tuck into lunch boxes for small hands.

Hawaiian Enchiladas - This recipe is a spin on a pizza favourite! Use different toppings to change up the flavours. 

Pecan Parmesan Chicken Bites - With a variety of texture and flavour, this recipe is easy to prepare and fun to make.

Spicy Turkey Vegetable Casserole - All-in-one casseroles always make dinner easy. Serve this one up with some rice to sop up any juices or some warm corn bread. 

2nd place

Banana Nut Smoothie - Bananas are a wonderful way to start your day in this smoothie. With the addition of nut butter and tofu, you will get added protein and a great nutty flavour.
Asian Inspired Vermicelli Frittata - This easy to make frittata has a hint of sesame flavour that is sure to please your family.
No Bake Chocolate Almond Bliss Bars - A no bake snack is a perfect way to get kids started in the kitchen. The natural sweetness of dates makes these extra tasty. You’ll get a protein punch with the nuts and seeds to keep you going.
Oat Flax Pancakes with Steamed Cinnamon Apples - This flavour combination is a great start to the day. Have some fun with these pancakes and make them into shapes.
Mango Black Bean Salad - This salad can be enjoyed on its own or added to a bowl of greens. If you’re looking for a fresh new dip or salsa idea, you can serve it up with baked tortilla chips for a healthy snack option.

3rd place 

Easy Fruity Crepes - Make the crepes ahead of time and keep them in the fridge for a fun weekday breakfast idea.

Kids Pix Trail Mix - Grabbing a handful of this trail mix is a great way to enjoy some sweet goodness. Sprinkle over yogurt or fruit. Check out bulk stores for a wide variety of ingredients.

Saucy Shrimp and Vegetables - Change up your routine and serve this unique dish over mashed squash or sweet potato. Rice is great to sop up the sauce with the shrimp. 

Tangy Egg Salad Lettuce Wraps - Romaine will give a big crunch but Boston lettuce makes great cups to hold your filling for this egg salad wrap. Be sure to try and add other fun vegetables like shredded carrot or zucchini.

Jazzed Up Tuna Salad - Tuna salad is a great staple for lunch. Make sure to jazz it up and change what you’re adding to it for lots of variety in flavour and texture.

Honourable mention  

Apple Cinnamon Baked Oatmeal - Make this muffin-style oatmeal recipe ahead of time and warm it in the oven for a great breakfast. Add some yogurt for school or the office.

Crispy Kale Chips - Kale chips are a fun way to enjoy this tasty green. Change up the flavours and get creative with spices!

Pea Shoot Pesto - Pesto makes a wonderful sauce for pasta, but why not try it as a dip for crunchy vegetables or baked tortilla chips.

Coconut Cashew Curry Chicken - This spiced up chicken is saucy enough to serve over rice alongside your favourite vegetables. 

Creamy Zucchini Dip - This vegetable dip is perfect to serve up with crunchy vegetables. Whether you serve with whole grain crackers or pita crisps, this dip will be a great snack for the family.
