Jack, from Mississauga helps his mom make this bread. Adding the vegetables was his idea to add colour and flavour. Frozen or fresh whole wheat pizza dough can be found in the bakery section of the grocery store.

Whole wheat pizza dough |
1 bag (680 g)

Cheddar cheese, shredded |
1/2 cup (125 mL)

Directions
- Wash hands with soap and warm water for at least 20 seconds. Clean all countertops and equipment used for food preparation.
- Gently rinse bell peppers under cool running water. Scrub carrots with a clean vegetable brush under cool running water.
- Thinly slice peppers and carrots; place in a bowl. Drizzle with oil and thyme; stir to coat well. Spread onto parchment paper lined baking sheet and roast in 220ºC (425 ºF) oven for about 20 minutes or until tender and golden. Set aside.
- Roll out dough onto lightly floured surface to 40 x 25 cm (16 x 10-inch) rectangle.
- Sprinkle dough with roasted vegetables leaving 2.5 cm (1-inch) border on one long edge.
- Sprinkle with cheese and starting from long end, roll dough jelly roll style pinching ends to seal seam.
- Place seam side down on large parchment-lined baking sheet and bake in 200ºC (400ºF) oven for about 30 minutes.
- Let cool before slicing and serving.
