Zahmari, from Windsor, submitted this recipe. Make this muffin-style oatmeal recipe ahead of time and warm it in the oven for a great breakfast. Add some yogurt for school or the office.

Cooking Time: 30 minutes

Makes: 12 muffins

Tips

  1. Choose your favoruite fruit combinations like pineapple or blueberry with dried cranberries or apricots.
  2. Oatmeal Cupcakes: For a fun idea, just before eating, spread Greek yogurt over the top of each serving and sprinkle with raisins or other dry fruit.

Ingredients

Large flake oats

3 cups (750 mL)

Ground cinnamon

2 Tbsp (30 mL) 

Baking powder

2 tsp (10 mL) 

Salt

¼ tsp (1 mL) 

Milk

1 1/2 cups (375 mL)

Eggs

Unsweetened apple sauce

½ cup (125 mL)

Canola oil

¼ cup (60 mL)  

Diced apple

¾ cup (175 mL)   

Raisins

¼ cup (60 mL) 

Maple syrup, optional

Directions

  1. Wash hands with soap and warm water for at least 20 seconds. Clean all countertops and equipment used for food preparation.
  2. Preheat over to 350°F (180°C).
  3. Gently rinse apple under cool running water.  Core and dice; set aside.
  4. In a large bowl, combine oats, cinnamon, baking powder and salt.
  5. In another bowl, whisk together milk, eggs, apple sauce and oil. Pour over oat mixture and stir to combine. Stir in apple and raisins.
  6. Divide mixture among 12 lightly sprayed muffin tins. Bake for about 30 minutes or until tester inserted in centre comes out clean.
  7. Serve warm as is or with a drizzle of maple syrup.
