Zahmari, from Windsor, submitted this recipe. Make this muffin-style oatmeal recipe ahead of time and warm it in the oven for a great breakfast. Add some yogurt for school or the office.

Makes: 12 muffins
- Choose your favoruite fruit combinations like pineapple or blueberry with dried cranberries or apricots.
- Oatmeal Cupcakes: For a fun idea, just before eating, spread Greek yogurt over the top of each serving and sprinkle with raisins or other dry fruit.
Ingredients

Large flake oats |
3 cups (750 mL)

Ground cinnamon |
2 Tbsp (30 mL)

Baking powder |
2 tsp (10 mL)

¼ tsp (1 mL)

Milk |
1 1/2 cups (375 mL)

Unsweetened apple sauce |
½ cup (125 mL)

Canola oil |
¼ cup (60 mL)

Diced apple |
¾ cup (175 mL)

Raisins |
¼ cup (60 mL)

Maple syrup, optional |
Directions
- Wash hands with soap and warm water for at least 20 seconds. Clean all countertops and equipment used for food preparation.
- Preheat over to 350°F (180°C).
- Gently rinse apple under cool running water. Core and dice; set aside.
- In a large bowl, combine oats, cinnamon, baking powder and salt.
- In another bowl, whisk together milk, eggs, apple sauce and oil. Pour over oat mixture and stir to combine. Stir in apple and raisins.
- Divide mixture among 12 lightly sprayed muffin tins. Bake for about 30 minutes or until tester inserted in centre comes out clean.
- Serve warm as is or with a drizzle of maple syrup.
