In Sharanya from Markham’s own words: “Do you want to try something new, soft and crunchy? Then you want to try this chicken salad sandwich! It is a cold sandwich that can be made during any time of the day or night and is really healthy. It’s so simple to make. You are going to love it.”
This is a great way to use up leftover chicken from last night’s dinner. For variety, try this sandwich with different flavours of hummus. You can also use cream cheese instead of the hummus.
Preparation Time: 10 minutes
Makes: 1 1/2 cups (375 mL) chicken salad mixture (1 sandwich)
Serving Size: 1/2 sandwich
- If you want a bit more zip to your sandwich, add 1 Tbsp (15 mL) lemon juice to the chicken mixture.
- Put leftovers away within 2 hours or sooner if they are in a warm location.

Chickpea hummus or soft cream cheese, divided |
1/4 cup (60 mL)

Directions
- Wash hands with soap and warm water for at least 20 seconds. Clean all countertops and equipment used for food preparation.
- Gently rinse tomato, onion, lettuce and cilantro (if using) under cool running water. Remove the seeds from the tomato and finely dice. Place in a large bowl. Finely chop the onion and cilantro (if using) and add to the bowl.
- Stir in chicken, 2 Tbsp (30 mL) of the hummus, cilantro (if using), salt and pepper.
- Place bread on clean work surface and spread each slice with remaining hummus and top each slice with lettuce.
- Divide chicken mixture between bread slices and serve.
