This recipe was submitted by Ishaan who’s in grade 3 in Vaughan, ON. Ishaan likes to help measure the ingredients and sprinkle the cheese. This is a unique way to use quinoa.

Serves: 4 to 6
- Use tri coloured quinoa to give the casserole a different look.
Ingredients

Broccoli florettes |
1 cup (250 mL) |
Onion |
1/2 cup (125 mL) |
Quinoa |
1 cup (250 mL)

Vegetable or chicken broth or water |
2 cups (500 mL)

Cheddar cheese, shredded, divided |
1 1/2 cups (375 mL)

Milk |
1/2 cup (125 mL)
|
Black pepper |
1/4 tsp (1 mL)

Directions

Wash hands with soap and warm water for at least 20 seconds. Clean all countertops and equipment used for food preparation.

Rinse broccoli and onion under cool running water, chop and set aside.

In a saucepan bring quinoa to boil with broth. Reduce heat to low; cover and cook for about 15 minutes or until liquid is evaporated and quinoa is tender.

Stir in broccoli, onion, 1 cup (250 mL) of the cheese, milk and pepper.

Scrape into a greased 8-inch (1.5 L) square baking dish. Sprinkle remaining cheese over top.

Bake in 350°F (180°C) oven for about 35 minutes until the internal temperature reaches 74 ºC (165ºF) on a digital food thermometer.
