Berry Christmas Wreath

Kids Recipe Challenge Winning Recipe 2011: 2nd Place!  Category: After school snacks, grades 1-3

Sarah, in West Lorne, says this recipe is cool and fun to try!

This is an easy and fun snack to make. When you use your favourite toppings and fruit, the combinations can be endless! An apple corer will help make a perfect circle for the wreath. Otherwise, parents can use a knife to take out the core and then kids can have fun with the decorating!

Preparation Time: 10 minutes

Tips

  1. You can also substitute cream cheese mixed with some yogurt for the topping.
  2. To make yogurt cheese: Pour 1 tub (650 g) of plain yogurt into a cheesecloth lined sieve set over a bowl. Cover and refrigerate for at least 6 hours or up to overnight. This will allow the liquid to drain out of the yogurt so you are left with a thick and creamy cheese. Drain the liquid and place yogurt cheese into a sealed container and refrigerate until needed. Makes about 375 mL (1 1/2 cups).

Ingredients

Apple

Blackberries or raspberries 9
Cherries 9
Fresh mint leaves (optional)
Low fat yogurt cheese or peanut butter

2 Tbsp (30 mL)

Directions

  1. Wash hands with soap and warm water for at least 20 seconds. Clean all countertops and equipment used for food preparation.

  2. Rinse apples, berries, cherries and fresh mint leaves (if using) under cool running water.

  3. Using an apple corer, remove the core of apple and slice into 5-6 slices. Then pit the cherries and cut in half, along with the berries.

  4. Spread each slice with some of the yogurt cheese or peanut butter and top with alternating cherries and berries.

  5. Garnish with mint to serve (if using).
