2015 Kids Recipe Challenge winning recipe: 1st place!
Program Coordinator Joana, from Kingston, submitted this recipe on behalf of the Girls Inc Limestone After School Program. This is a great and easy way to use up leftover chicken and serve it up for lunch. Cut into small roll ups and tuck into lunch boxes for small hands.
Preparation Time: 10 minutes
Serves: 4
- You can substitute cooked turkey for the chicken.
- Put leftovers away within 2 hours or sooner if they are in a warm location.
Ingredients

Bell pepper (any colour) |

Green onions |
2 stalks

Chicken, cooked, chopped |
2 cups (500 mL)

Light cheddar cheese, shredded |
1/2 cup (125 mL)

Tzatziki |
1/4 cup (60 mL)
|
Hot pepper sauce (optional) |
1/4 tsp (1 mL)

Large whole wheat flour tortillas |

Directions
- Wash hands with soap and warm water for at least 20 seconds. Clean all countertops and equipment used for food preparation.
- Gently rinse pepper and green onion under cool running water. Chop and set aside.
- In a bowl, combine chicken, onions, pepper, cheese, tzatziki and hot pepper sauce (if using).
- Spread over tortillas.
- Roll each up and cut into 2-inch (5 cm) pieces.
