Hawaiian Enchiladas

2015 Kids Recipe Challenge winning recipe: 1st place!

Jaden, from Goderich, created this recipe. It’s a spin on a pizza favourite! Use different toppings to change up the flavours.

Tips

  1. You can substitute tomato or pasta sauce for the pizza sauce. 
  2. You can substitute 3 chopped slices of ham or turkey for the bacon. 
  3. For an easy pizza, don’t roll up the tortillas. Instead, place them flat on the baking sheet. 
  4. Put leftovers away within 2 hours or sooner if they are in a warm location. Reheat leftovers to an internal temperature of 74°C (165°F). Discard uneaten leftovers after they have been reheated.    

Ingredients

Small flour or corn tortillas

Pizza sauce

1 ½ cups (375 mL) 

Baby spinach 2 cups (500 mL) 
Red bell pepper

Pineapple, fresh or canned 1 cup (250 mL) 
Fresh basil, chopped (optional) 2 Tbsp (30 mL)
Turkey bacon, cooked, chopped

 6 slices

Light mozzarella cheese, shredded

1 ¾ cups (425 mL) 

Directions

  1. Wash hands with soap and warm water for at least 20 seconds. Clean all countertops and equipment used for food preparation.       
  2. Lay tortillas on clean work surface and spread 2 Tbsp (30 mL) of pizza sauce on each. 
  3. Gently rinse spinach, pepper and basil (if using) under cool running water.   Chop pepper and pineapple; set aside.  
  4. Sprinkle each tortilla with spinach, pepper, pineapple and turkey bacon. Top each with cheese and basil (if using).  
  5. Roll up and place in small baking dish. Pour remaining sauce over top. 
  6. Bake in preheated 350°F (180°C) oven for about 15 minutes until the internal temperature reaches 74 ºC (165ºF) on a digital food thermometer.
