This is a quick and easy pasta dish perfect for a weeknight’s supper.

			| Dry whole wheat pasta | 
					3 cups (750 mL)   | 
		
			| Olive oil | 
					1 Tbsp (15 mL)   | 
		
			| Chicken breast, diced | 
					1 (1/2 lb/250 g) | 
		
			| Diced red onion | 
					¼ cup (60 mL) | 
		
			| Cloves of garlic | 
					3 | 
		
			| Cherry tomatoes, cut in half 
 | 
					1 cup (250 mL) | 
		
			| Shrimp, peeled 
 | 
					10 medium  | 
		
			| Fresh baby spinach, washed 
 | 
					1 cup (250 mL) | 
		
			| Finely chopped fresh basil 
 | 
					1 Tbsp (15 mL) or 1/2 tsp (5 mL) dried | 
		
			| Pepper 
 | 
					1 tsp (5 mL) | 
		
			| Parmesan cheese 
 |

				Directions
			
				- 
					Cook pasta according to package directions. Set aside.
- 
					Meanwhile, heat oil in a large fry pan over medium heat.
- 
					Add the chicken and cook for 5 minutes until fully cooked.
- 
					Add the red onion, garlic, and tomato and sauté for 5 minutes.
- 
					Add the shrimp and spinach and cook for 5 minutes, stirring frequently.
- 
					Remove from the heat and toss in the basil, pepper and cheese. Serve immediately over the pasta.
