3 Tbsp (50 mL)

Grated orange zest and fresh lemon juice |
1 tsp (5 mL)

Liquid Ontario honey and dijon mustard |
1 tsp (5 mL)

Salt and pepper to taste |

Peeled and finely grated raw Ontario beets |

Mixed chopped fresh herbs such as parsley, tarragon, chervil and chives |

Directions

Whisk together 1/4 cup (50 mL) fresh orange juice, 3 Tbsp (50 mL) olive oil, 1 tsp (5 mL) each grated orange zest, fresh lemon juice, liquid Ontario Honey and Dijon mustard, and salt and pepper to taste. Stir into 3 peeled and finely grated raw Ontario Beets to coat evenly. Add 1 Tbsp (15 mL) mixed chopped fresh herbs sucas parsley, tarragon, chervil and chives.
