Blueberry and Tomato Bruschetta

The added blueberries to this bruschetta mix make it extra special, colourful and appealing to children. Kids can make the recipe on their own to enjoy with friends.

Seven year old Logan from Markham aspires to be a chef when he grows up.  He loves being creative, cooking in the kitchen, and eating healthy foods!  This is a unique combination of some of his healthy favourites.

Tips: 

  1. ​Put leftover blueberry and tomato mixture away within 2 hours or sooner if it is in a warm location.

Ingredients

Cherry tomatoes

2 pints (255 g each)

Fresh basil leaves

8 leaves

Fresh blueberries 

1 cup (250 mL)

Extra virgin olive oil 

3 Tbsp (45 mL)

Aged balsamic vinegar 

1 Tbsp (15 mL)

Salt 

1/4 tsp (1 mL)

Feta cheese, crumbled 

1/2 cup (125 mL) 

Baguette, sliced 

Directions

  1. Wash hands with soap and warm water for at least 20 seconds. Clean all countertops and equipment used for food preparation.         

  2. Gently rinse tomatoes, basil and blueberries under cool running water. Quarter tomatoes and chop basil, then place into a large bowl. Add blueberries and stir.   

  3. In a small bowl, whisk together oil, vinegar and salt. Pour over tomato mixture and add feta. Stir gently to combine. Spoon mixture onto baguette slices to serve.
