Ingredients

Cherry tomatoes |
2 pints (255 g each)

Fresh basil leaves |
8 leaves

Fresh blueberries |
1 cup (250 mL)

Extra virgin olive oil |
3 Tbsp (45 mL)

Aged balsamic vinegar |
1 Tbsp (15 mL)

Salt |
1/4 tsp (1 mL)

Feta cheese, crumbled |
1/2 cup (125 mL)

Baguette, sliced |

Directions

Wash hands with soap and warm water for at least 20 seconds. Clean all countertops and equipment used for food preparation.

Gently rinse tomatoes, basil and blueberries under cool running water. Quarter tomatoes and chop basil, then place into a large bowl. Add blueberries and stir.

In a small bowl, whisk together oil, vinegar and salt. Pour over tomato mixture and add feta. Stir gently to combine. Spoon mixture onto baguette slices to serve.
